What’s for Dinner?
“Cheeseburger or bust.” Blame my Type O blood, but I’m wired for a red-meat fix. It’s not everyone’s thing, I know—but this new “clean” recipe is checking several boxes for me tonight.
KETO CHEESBURGER BAKE
Box 1: Gluten free / Dairy free / Grain free
Box 2: Simple to make.
Box 3: It was delish!
Box 4: A small gang of teen boys are inhaling it after basketball practice. I didn’t tell them the cheese is vegan shhhhh.
Box 5: I actually made it yesterday & just reheated the slices at 300 in the oven.
The recipe is from “Trust Your Gut,” by Jennifer Fisher.
INGREDIENTS
(Serves 9)
Olive oil spray
1 Tbsp Olive oil
2 pounds Ground beef
Medium Yellow onion
1/2 tsp Kosher salt
1/2 tsp Pepper
6 large Eggs (I did soy free!)
1 cup Plain almond milk
1 tsp Dry mustard
1 tsp Garlic powder
6 slices Plant-based American or Cheddar cheese (I used Violife)
OPTIONAL TOPPINGS
Shredded iceberg lettuce
Tomato
Red onion
Dill pickles
Mustard
Ketchup
9 slices bacon / chopped (I didn’t do this)
Mayo free vegan ranch
Coconut yogurt / Unsweetened almond milk / Garlic powder / Onion powder / Dried dill / Pepper / Salt / Fresh chives / Fresh parsley / Crushed red pepper
DIRECTIONS
Sauté the beef and onion in the olive oil (5-7 min until brown & onions soft)
Whisk together everything else
Spray 8 inch baking dish with olive oil
Spoon the beef (not the grease) into the pan / don’t push it down or pack it
Pour the egg mixture over the beef
Bake at 350 for 20 minutes
Take it out. Add 6 cheese slices to top. Put it back in 8-10 minutes.
Cut in large pieces. Like lasagna ; )
Sprinkle with toppings…
